Combine whole olives with sliced garlic, a pinch of chili flakes, and a generous splash of extra virgin olive oil in a small skillet or saucepan.

Warm gently over low heat for about 5 minutes, stirring occasionally, but do not let the oil boil.

As the olives heat, they absorb the flavors of the garlic and chili while becoming wonderfully fragrant.

Transfer to a serving bowl and sprinkle with chopped parsley or a little lemon zest, if desired.

Serve warm with crusty bread to soak up the aromatic olive oil, or alongside cheese and cured meats.
