Ingredients

• 2 cups young Jackfruit chunks
• 1 cup coconut milk
• 2 tbsp curry paste
• 1 tsp fresh ginger, grated

Instructions

1. Saute young Jackfruit chunks with curry paste and ginger.
2. Add coconut milk and simmer until the Jackfruit is tender.
3. Serve hot. Tastes like pulled chicken curry, but completely plant-based!
