Caper. This shrubby perennial plant grows 3-5 feet high, with numerous branches, bearing a pair of hooked spines at the base of each leaf stalk. Flowers are about 2 inches in diameter, white with numerous violet stamens, and very pleasing in appearance. Plants grow well in nutrient poor sharply-drained gravelly soils. Capers are salt-tolerant and flourish along shores within sea-spray zones. Capers of commerce are immature flower buds which have been pickled in vinegar or preserved in granular salt.
Plant seeds in 1/2" coarse sand / loose soil mixture. Requires full sun. Native to dry regions so water only occasionally - never keeping it wet. It is a poor germinator and may take months to germinate. To improve germination, soak seeds overnight in hot water, then wrap in cloth and store in a sealed jar for 3 months in the refrigerator, and finally - soak again in hot water overnight and plant.
