Small leaves are rich in an essential oil and are source of the spice. The commonly used spice curry patta is traditionally consumed by diabetics in southern part of India. In Indian cuisines, curry leaves are used fresh; for some recipes, the leaves should be oven-dried or toasted immediately befor usage. Another common technique is short frying in butter or oil The small white flowers are sweetly scented. It needs warm temperatures with full sun to partial shade. The soil should be allowed to thoroughly dry between waterings. Fertilize weekly during the growing season. Winter temperatures should not fall below 50°. Water very sparingly during the winter months and do not fertilize. Since it is a small tree it doesn't need repotting very often.

An Indian friend gave me a very small curry plant three years ago - it has weathered two not very cold winters in my Jacksonville garden(tho I did cover it a couple times when frost was predicted). It is now almost 5 feet tall. In a protected area at the edge of the garage and edge of an oak tree's shade but w/ a southern exposure. I use the leaves regularly for cooking - fresh usually tho I have dried the leaves for winter cooking in the past. I recommend it highly not only because it is attractive but because it is great for cooking and for making gifts to other cooks.

Used to flavour tasty home cooked CURRYPUFFS!(mmmm!) Very rank in growth in my house - to the point of being extremely invasive! Grows easily from black, 1-cm sized pumpkin-shaped seeds. My grandma harvests it regularly to be 'distributed' to friends...hehe...
